Sweet Potato Pie

My aunt Nita loves to cook. It is not surprising see her make a sweet potato pie for the neighbors to thank them for their kindness. This recipe is a combination of recipes. It is bit of the classic mixed with the new. The orange juice in this recipe will brighten and enhance the flavors of the sweet potato. I hope you give it a try.
INGREDIENTS
1 pound sweet potato ===> Peeled - Cooked - Mashed
½ cup butter, softened
1/2 cup brown
1/2 cup granulated sugar
1/2 cup condensed milk
1 T pulp free orange juice
1 T flour
2 large eggs eggs
1/4 t salt
1/2 t ginger
1/2 t nutmeg
1/2 t all spice
1/2 t cinnamon
2 T vanilla extract
1 - 9 inch unbaked pie crust
DIRECTIONS
Preheat oven to 350 degrees
In a mixer add the mashed sweet potatoes and butter.
Stir in flour and mix until combined, add the sugars, nutmeg, cinnamon, all spice, ginger, salt, evaporated milk and vanilla.
Add the eggs one at a time, once combined add the orange juice.
Beat the mixture until it reaches a smooth consistency.
Place empty pie crust on a foil lined cookie sheet.
Pour filling 9 inch unbaked pie crust.
Bake at 350 degrees for 55 to 60 minutes,
Insert a toothpick or knife in the center, if it comes out clean the pie is finished.
